Borachio Fleurieu Rosé
This unique wine, either a pale red or dark rosé, is primarily made from whole-cluster Pinot Noir, which is foot-stomped and then pressed into 300L barrels after a few days, achieving a ruby hue and translucence reminiscent of L'Anglore. It is enhanced with a blend of carbonic Pinot Noir from a tank and direct-pressed Pinot Gris that ferments over whole clusters of Pinot Noir, both also aged in 300L barrels. Additionally, Chardonnay is direct-pressed and barrel-fermented. This composition results in a wine that exudes a deep Burgundian character, marked by beautiful aromatics and a saline, perfumed lift, underscoring how harmoniously these grape varieties complement each other.
